About the apprenticeship

Duties

Read and understand the daily business sheet, checking with the Head Chef or Duty Manager for any additional details.
Prepare prep lists for mis-en-place for future days.
Check all temperatures in refrigerators and freezers and record relevant data in accordance with the Health and Safety Regulations.
Lead section of the kitchen area.
Control wastage and portion sizes to aid achievement of departmental budgets.
To ensure that all working areas are kept clean and tidy at all times.
To prepare, cook and serve food as specified by the Head Chef.
To assist the Head Chef and Sous Chef in ensuring HACCP is in place.
To assist in food ordering by informing the Head Chef when stocks are reaching par stock levels.
To attend any departmental and training meetings as required.
To be dressed in a smart and professional manner.
To comply with all health and safety legislation.
